DIY Caramel Popcorn

Happy Holidays!!!

For this week of Blogmas, I thought it would be fitting to post a quick, easy and delicious recipe you can try out for your holiday weekend. My dad and I actually made this the other week and are now obsessed. Whether you need a good holiday snack to munch on, something to leave for Santa or bring to a holiday gathering, I cannot recommend this stovetop caramel popcorn enough!

Ingredients and Supplies:

  • Cast iron wok or kettle with lid

  • 1/4-1 cup popcorn kernels of choice (depending on serving preference)

  • 1/2-1 stick of butter of choice (depending on serving)

  • 1/4 cup coconut or similar oil

  • 1-3 bags of Werther’s Original caramel candy (depending on serving and preference)

  • 1 tablespoon raw or brown sugar

  • 1/4 teaspoon of salt

  • OPTIONAL—1/2 cup pecans or salted nut of choice

Directions

1.) Oil the wok on low heat and then add about a bag’s worth of Werther’s Original caramel candies

2.) Add about 1/2 stick of butter to the caramel as it is softening and stir on low heat until it begins to soften

3.) Once caramel mixture begins to melt into the butter, add the popcorn kernels and then cover with a lid on low heat until popcorn begins to pop

4.) Once the popcorn has popped the majority of the kernels, mix the caramel and butter thoroughly with the corn

5.) Cover with a lid again for about another minute to allow any last kernels to pop

6.) Remove cover and add a dashes of salt and sugar to the popcorn (as well as any desired nuts) and stir again for about 30-60 seconds with lid off

7.) Pour popcorn into container or bowl of choice and cover for about 15 minutes to dry

8.) DEVOUR and enjoy!

I hope you enjoy this delicious popcorn! It would be great to serve in a cute holiday tin as a gift or party favor or serve in festive serving bowls as a snack or dessert companion. There is a lot of room for experimentation with this recipe and the best part is it’s gluten free, inexpensive and quick! I would say the total prep and cook time is around 15 minutes, and the smell will permeate your kitchen like a carnival!
